INGREDIENTS
- 2 ripe plums
- 1/2 cup coconut water
- 1/2 cup regular water
- 1/2 tsp of celtic sea salt
- 1/2 oz of maple syrup
- 1 oz of lemon juice (aka the juice from one full lemon)
- star anise for garnish
METHOD - WITH BLENDER
- Slice 2 ripe plums into pieces and add to a wide glass or jar.
- Add coconut water, regular water, maple syrup, sea salt, and lemon juice to the jar.
- Use an immersion blender to blend all the ingredients together. If you don't have an immersion blender, you can transfer your ingredients to any blender you have and use that. I just find the immersion blender easier to clean.
- Add back all ingredients to your serving glass, add ice, and stir well.*
- Garnish with a star anise and enjoy!
METHOD - WITHOUT BLENDER
If you don't have a blender, you can still make this drink.
- Slice 2 ripe plums into pieces and add them to a wide glass or jar.
- Add maple syrup and lemon juice to the same jar on top of the plums. Use a long flat-bottomed tool (such as a cocktail muddler) and mash together the ingredients until you get a jam-like consistency.
- Add the water, coconut water, and salt.
- Optional - If you don't like having pulp in your drink, you can strain the mixture through a mesh strainer to make it smooth.
- Add ice and stir well*.
- Garnish with a star anise and enjoy!
NOTES
*I like shaking the drink in a closed mason jar or cocktail shaker to chill it and make it froth up. This makes it feel more decadent, but it is completely optional.
